Happy as leaves

Last night I shook hands on a new flat. There is still Italian paperwork to puzzle over and a dotted line to sign (on), but a 3rd floor flat with a small kitchen balcony is more or less ours. We’re not moving far, 600 meters give or take a corner, from one side of Testaccio to the other, from the via Marmorata edge of the wedge to tree-lined via Galvani.

We will miss our calm, cavernous courtyard with its palm trees and blooming oleander, our olive-green door and kitchen window. However I’m pretty sure this missing will be appeased by the balcony and the flat judicious position, that is: a corner away from my preferred bar for breakfast and few long strides from Monte dei cocci and the new Testaccio market. There is also a forno within sniffing distance and another bar directly underneath our new flat that’s run by a man who bears an uncanny resemblance to both Alice Cooper and Brian May. I am relieved, excited and as happy as (these) radish leaves.

It is the inimitable Fergus Henderson that reminds us to seek out radishes with happy leaves. Pert, frisky and healthy leafage that reassures us of recent picking, thoughtful bundling and minimal travel. Having spotted both happy leaves and bright unblemished bulbs at the market, I bought three bunches. My sling suspended son managed to pull a red bulb from the bunch lolling from the top of the shopping bag as we walked home. Delight was soon replaced by confusion and then action. I walked the length of via Marmorata with pieces of radish suspended in my frizzy hair.

Having washed the radishes and their happy leafage in plenty of very cold water, I set two bunches aside for today’s recipe and put the third on a plate on the table. There was also butter – just long enough from the fridge to be forgiving but still promising opaque resistance – the stone jar of malden salt and slices of sourdough bread. The idea is to butter the radish rather than the bread and then sprinkle it with salt. I also butter my bread, thickly, as if plastering a particularly potholed wall and then take alternate bites of buttered and salted radish, happy leaves and buttered bread. The combination of radish: crisp, clean with warm peppery leaves, good butter, tiny shards of salt and best bread is one to relish and excite the most languid of stomachs.

With our San Bartolomeo chicken roasting and filling the flat with a familiar and reassuring smell, I separated the leaves from the bulbs of the two remaining bunches. As you might remember I roast my chicken according to Simon Hopkinson, that is a hot blast for twenty minutes or so, a slightly cooler roast for about an hour and then a rest in the cooling oven with the oven door open-a-jar for 20 minutes. When I have radishes, after the roast but before the rest, I tip and scrape some of the sticky juices and fat from the chicken roasting pan into a frying pan.

Then while the chicken rests, I fry the radish bulbs the hot, sticky fat for about five minutes, in which time their colour changes from that of an old English telephone box to that of a climbing rose: the most lovely blushing pink.  I then add the happy leaves to the hot pan along with a pinch of salt, a grind or two of black pepper and pull the pan from the heat. A gentle stir and the leaves wither and wane in the residual heat and settle in the rich, fatty juices.

I carve my chicken in the roasting tin, pulling and tearing rather than carving, rolling each piece in the juices collected at the bottom of the pan before putting it on the plate. A round white plate. I am resolute about this and remain unswayed by any patterned or pretty plate propaganda. Braised radishes, peppery and fresh, still crisp but with a hint of giving make a perfect foil for a roasted bird wether it be duck, goose or an excellent chicken. Particularly Duck.

Not only are the withered leaves: peppery and sodden with rich meaty juices wonderfully tasty, they provide what Fergus Henderson calls structural weave, a tangled green bedpreventing your blushing radishes from rolling all over the plate. Come to think of it, I could do with a little more structural weave in my life. Now bring in the boxes and let the packing commence.

Braised radishes for with Roast Duck, goose or chicken

  • 3 bunches of radishes with happy leaves
  • juices from the roasting pan or duck, goose or good chicken or duck fat with a splash of chicken stock
  • sea salt and black pepper.

Wash the radishes in cold water. Remove the leaves from the bulbs.

Heat up your roasting juices or fat and stock and add the radish bulbs. Allow the bulbs to sizzle vivaciously, stirring attentively. After about five minutes the bulbs will have turned from red to blushing pink orbs, still crisp but with a hint of giving. Add the leaves and then remove the pan from the heat.

Season with salt and freshly ground pepper and stir allowing the leave to wilt in the residual heat. Serve with slices of duck, goose or chicken making sure you spoon over the juices from both the meat and the radishes.

Seeing red

It was all so green when I left. A week away –  a bonny wedding weekend on an island in the Scottish Hebrides called Tanera Mòr and then a few days slightly too far outside London with my family – and Testaccio market is splattered, like a Cy Twombly canvas, with red. There is still green of course, a market patchwork of asparagus, peas, spinach, slim beans, forest green chard and soft heads of spring lettuce. But it’s the startling splatters: tomatoes, strawberries, crimson cherries and bunches of blushing radishes that are catching my eye.

I’ve never found peeling tomatoes a faff. Quite the opposite in fact, I find the spa-esque process – a hot plunge, a nick with a sharp knife, a cold plunge before peeling –  thoroughly pleasing. Maybe I should get out more? My carelessness with a handful of tomato skins once blocked the sink in the smart kitchen Romla and I were doing some rogue catering in. Fortunately the husband of the house, a man so handsome I turned the same colour as the tomatoes, happened to be in the kitchen while our twenty-three year old selves were peering anxiously into the blocked Belfast. He strode over (I think he might even have been wearing buff riding breeches) plunged his aristocratic hand down the plughole, scooped out the offending red skins and complimented us on the suggestive smell of dinner.

These are Sicilian pomodori Piccadilly. They are fleshy, flavoursome things the size of small plums that smell of the tangled vine they grew on. Tomatoes like this make me forget my jaded self who has shaken off much of her Roman romanticism, and remember the Rachel who first arrived in Italy nine springs ago. The woman who stood staring in gastronomic awe at the mounds of red: tiny orbs, beefy cow hearts, fat fluted saucers, pendulous plums and who ate them chopped, sliced or simply squashed idly onto bread with a careless quality of olive oil and too much salt day after day after day just because she could.

Having sung the praises of Italian pomodori when I know full well many of you might not be able to find such full hipped and red lipped tomatoes, I should hasten to add today’s recipe is a forgiving one. Extremely forgiving, as it involves the saving grace of many-a-mediocre tomato: a flesh shriveling, flavour intensifying roast.

Having peeled your tomatoes, sliced them in two and set them cut-side-up in a well-oiled baking dish, you tuck a thin sliver of garlic into the soft pulp and place a quarter of anchovy filet on top of each half. You then scatter some soft, craggy breadcrumbs, a little finely chopped fresh rosemary, salt and black pepper over the upturned faces before dousing the whole tray, fearlesslessly and drunkenly with extra virgin olive oil. I find a glass of wine is helpful when a reckless olive oil hand is called for.

You bake your well-seasoned tomatoes at 180° for about 20 minutes or until they are extremely soft, collapsing, curling sweetly at the edges and starting to suggest sauce. Until the anchovies have dissolved into the tender tomato flesh and the olive oil inebriated breadcrumbs are crisp and golden.

The combination of roasted tomato: sweet and savory with the intense, salty fishiness of the anchovy, a warm notes of tomato smothered garlic, the smoky, floral rosemary and crisp olive oil soaked breadcrumbs is a mighty good one. A mighty good one that sings. I agree with the brilliant Niki SegnitIf you have ever wondered what Unami is, a mouthful of tomato and anchovy should settle the matter.’ I’d go one step further and say a mouthful of roasted tomato with anchovies (the fat, plump Sicilian ones preserved under coarse salt that you need to soak and then de-bone) rosemary and olive oil breadcrumbs and the Unami matter is settled and some.

You could eat your tumbling mess of anchovy, rosemary and breadcrumbed tomatoes with a grilled lamb chop, pork chop or slice of roast chicken. Alternatively – and I appreciate the suggestion of breadcrumbs on bread might sound odd –  they are excellent smeared on toast. Or you could do as I did today.

That is mash your baking tray of warm tomatoes clumsily into a rough sauce with the back of a wooden spoon and then stir this sauce into some al dente linguine or spaghetti. Don’t worry about serving bowls or dishes, mix the pasta with the sauce directly in the baking tray, making sure you diligently scrape and stir every sticky, oily morsel and crumb. Someone will also have to take a crust of bread to the tin once all the pasta is served-up.

This is how I (we) like to eat: pasta with a sauce that both strokes and punches. A green salad of lettuce, lovage and wild rocket and then a dozen crimson cherries made a nice finish to a Wednesday lunch.  Now about that flat hunting.

Linguine with oven roasted tomatoes, anchovies, rosemary and breadcrumbs

Serves 4

  • 1 kg ripe but firm and flavoursome tomatoes (plum-shaped Piccadilly work particularly well)
  • extra virgin olive oil
  • 2 plump cloves of garlic
  • 6 large or 8 small anchovy filets (preserved under oil or better still under salt)
  • 60 g soft, craggy breadcrumbs
  • a little finely chopped rosemary
  • salt and black pepper
  • 450 g linguine

Set the oven to 180°

Peel the tomatoes by plunging them first into boiling water for 60 seconds and then very cold water. The skins should slip and pull away easily.

Half the tomatoes and sit them – cut side up –  in an oiled baking tin. Peel and slice the garlic very thinly. Tuck a sliver of garlic into the fleshy pulp of each half. Using scissors, snip the anchovy fillets into quarters and sit a quarter on each cut tomato. Scatter the breadcrumbs and chopped rosemary over the tomatoes. Sprinkle and grind a little salt and black pepper then douse everything very generously with olive oil.

Bake the tomatoes for 20 minutes or so or until the tomatoes are very soft and starting to collapse and the breadcrumbs are golden and crisp. You need to keep a beady eye on them.

Cook the linguine in a large pan of well-salted fast boiling water. Using a wooden spoon, gently mash the tomatoes into a very crude, rough sauce, add the drained pasta, stir and serve immediately.

Spring into lunch

I feel like L.B Jefferies, sitting as I do, looking out of my rear window onto the courtyard. Lately I’ve been distracted by one window in particular. It starts early: rugs are beaten, sheets shaken and then throughout the day washing pegged, unpegged and pegged again on a line strung in a droopy grin from one window to the next. Yesterday two sets of curtains were washed and dried, as were three pairs of red slippers, a leopard-skin something and a tartan travel rug. As I write, slippers (still damp I imagine) have been pegged back out, various items shaken and some precarious window cleaning undertaken.

Unaccustomed as I am to spring cleaning (or cleaning in general for that matter, I’m a domestic disgrace) the activity across the courtyard almost propelled me into something yesterday. Then I remembered we’re moving in just over a month which will mean much shifting and sweeping. So much in fact, that I think I’m entitled to almost total domestic inertia until we bring in the boxes. By the way, I have no idea where we’re moving to, which is making me feel most peculiar.

A year and a half ago I could well have sat, computer glowing with the suggestion of work, caffe in hand, worrying while watching out of my rear window for hours. I tried to do this the other day. It was all going well; caffe sipped and gaze fixed. Then my neglected eighteen month old son jolted me back into a noisy and messy reality that involved two pan lids and a family sized bottle of shampoo. I could have taken the soapy opportunity to do some sort of cleaning but didn’t. We went to the market instead.

Testaccio market has moved of course. The century old mercato with its iron uprights and grimy glass roof, with it’s coarse, chaotic charm and surly attitude has now been replaced by a bright, polite and shiny-white structure that adheres to all sorts of regulations. We walk past the site of the old market – now bulldozed to the ground – on our way to the new market where neat rows of stalls sit subdued bearing neat piles of whatever. Not that this bright neatness has dissuaded us! If anything, we’re even more fiercely loyal to the displaced stall holders now they are at the mercy of a shiny but unfinished market, bureaucracy and ridiculous rents.

White and bright it may be, but Gianluca’s Stall was looking distinctly old-fashioned on Tuesday. A little more like it used to, piled high in an unruly manner as it was with the most glorious greens. Late April in Rome means an embarrassment of vegetable riches: peas and fave in their pods, grass like agretti, posies of broccoletti, rebellious spinach, wild and tame asparagus, wet garlic, spring onions. And of course the last of the tender-hearted warriors: artichokes, of which we bought three. A kilo of peas and fave both and a bunch of fat spring onions are we were set. For lunch that is.

Vignarola is a stew of spring vegetables. A tender, tumbling dish of fresh peas, broad beans (fave), spring onions, artichokes and (possibly) soft lettuce. It is one of my absolute favourite things to eat. Made authentically, vignarola is an elusive dish, possible only for few weeks between April and May when there is overlap, a vegetable eclipse if you like, between the first tiny peas, fave and sweet bulbs and the last of the artichokes. Now is the time!

There is plenty of preparation: trimming of artichokes, podding of peas and fave, slicing of onion. But once the vegetables are sitting tamed and obedient in their bowls it’s all pretty straightforward. You fry the onion gently in olive oil. You add the artichoke wedges, a pinch of salt and stir until each wedge glistens with oil. Next a glass of wine for the pan (and another for the cook) before you cover the pan for 15 minutes or so. To finish, you add the peas and fave, stir and cover the pan for a few more minutes or until the vegetables are tender and the stew has come together into a moist, tumbling whole. Vignarola is best after a rest and served just warm.

The flavours are wonderful together: artichokes tasting somewhere between best asparagus, the stem of steamed Calabrese broccoli and porcini, peas sweet and grassy, fave like buttered peas with a bitter afterthought and onions sweet and savory. But it’s the textures that really astound: the dense, velvety artichokes, the sweet explosion of pea, the smooth and waxy fave and the sly and slippery onion. Did I mention vignarola is one of my favourite things to eat?

We ate our vignarola with ricotta di pecora and bruschetta (that is toast rubbed with garlic and streaked with extra virgin olive oil) It was a good combination: the creamy, unmistakably sheepish cheese pairing well with the tender stew and the oily, garlic stroked toast.

The beauty of this dish is the cooking: part braise/part steamy simmer. The vegetables cook and roll round idly in their own juices meaning the flavours are kept as closely as guarded secrets, something Marcella Hazan calls smothered. It is – as you can probably imagine – impossible to give precise timings for vignarola as so much depends on your ingredients. Small tender artichokes may only need ten minutes, larger globes twenty. The tiniest peas may only need a minute or two, larger more mealy ones ten. Then there is the matter of taste! But isn’t there always? Do you want a brothy dish or something tumbling and moist? Adjust liquid accordingly. Do you like a lick of alcohol (I do) or would you prefer the pure taste of water?  Now I fear I have made it sound complicated! It isn’t. Best ingredients, instinct, lots of tasting and you can’t go wrong.

I should note that a traditional Roman vignarola contains pancetta or guanciale and lettuce. I don’t generally add either but you might like to. Unless the fave are properly tender and tiny I remove their tough opaque jackets – I have noted this below – a faff I know, but a worthwhile faff. Have a glass of wine while you pop. Spring cooking in lieu of spring cleaning, Hurrah.

Vignarola   Spring vegetable stew

serves 4

  • 3 large artichokes
  • a lemon to acidulate a bowl of cold water
  • 1 kg peas in their pods
  • 1 kg fave in their pods
  • 2 large or 6 small spring onions
  • 6 tablespoons olive oil
  • salt
  • a glass of white wine (or water)

Prepare the artichokes by first pulling away the darker tougher leaves, pulling them down towards the base of the artichoke and snapping them off just before the base. Then using a sharp knife, pare away the tough green flesh from the base of the artichokes and the stem. Detach the trimmed stems and slice them into four lengthways. Cut the trimmed artichoke globes into eight wedges. Drop the wedges and stems of artichoke into a bowl of cold water acidulated with lemon.

Shell the fave and the peas. If the fave are large and have a tough outer coat remove it by plunging the fave in first hot water, then cold and then squeezing/pinching off the opaque coat. Thinly slice the spring onion.

Warm the olive oil in a heavy bottomed saute pan or enamelled cast iron pot. Saute the sliced onion over a medium heat until it is soft and translucent. Add the artichoke wedges and stems, stir well so each piece is glistening with oil. Add the wine and a pinch of salt, stir again and then cover the pan. Cook the onion and artichokes for 15 minutes, stirring and jigging the pan from time to time. Add the peas and fave, stir, re-cover the pan and cook for another few minutes. Taste, season with salt and taste again. The vignarola is ready when the vegetables are tender and the stew had come together into a soft, moist, tumbling whole.

Let the vignarola settle for a few minutes then serve just warm. It is also good at room temperature.

Roll with it

The number eight tram rolls a good route. At least I think so. Starting in Largo di Torre Argentina, it cuts straight and then crosses the bridge, runs the entire length of Viale Trastevere before curving its way along Gianicolense and sliding into the terminus at Casaletto. On a good day; clear and avoiding the rush, top to tail takes about 22 minutes. On a bad day; rain and rush, it takes 35.

I don’t very often top to tail or tail to top on the number eight. Most days I’ll ride a section though: The Ministry of Education up to work at the children’s theatre, the theatre up to the park, purveyors of fine pizza bianca back to The Ministry, my biscuit shop up to Stazione Trastevere. Come to think of it, of all my routes – there are many, I’m both dedicated and dependent on the exasperating Roman public transport system – this is the one I ride the most.

Then every so often, last Saturday for example, we roll the whole line and are not only reminded what good curved cut the N° 8 makes through the city, but what a good destination awaits at the end of the line.

Occupying the ground floor of a nondescript modern building just yards from the tram terminus and identifiable only by a small yellow sign, the trattoria Cesare al Casaletto is, from the outside, unremarkable. I’d passed by, at first oblivious and then dismissive, dozens and dozens of times. Then, on advice from Katie, we went for lunch. The best lunch we’d had in a long time. And so we went back, again and again, each visit reaffirming our conviction.

Bright and luminous, da Cesare is the antitheses of the archetypal shadowy and surly Roman Trattoria - I should add I like shadowy and surly from time to time. It’s quietly elegant yet cordial and comfortable. On Saturday we were given a table in the nicest corner with plenty of space for a high chair. Da Cesare is a family trattoria in the truest sense and this is personified by the owner’s bold little girl who marches up to your table to say ciao.

To start, we divided a portion of plump, preserved anchovies: oily, fiendishly fishy filets to be squashed onto bread and polpette di bollito misto; delicate, fragile, deep-fried spheres of breaded shredded veal served with a spoonful of pesto. Then we shared a primo of fresh egg pasta with vignarola (braised artichokes, peas, broad beans and spring onions) and pecorino romano cheese. We paused. For secondo my companion had baccalà alla Romana (salt cod with tomatoes) and I had involtini al sugo, two quietly delicious beef rolls in a rich tomato sauce. There were also side dishes, one a tangle of dark-green ragged cicioria ripassata and another of chips. Such good chips. We finished with coffee and biscuits that had not long been pulled from the oven.

It took me a few visits to understand what makes the Food at da Cesare so special. Of course it’s the excellent ingredients, the skill and a lightness of touch that transforms traditional Roman food – the menu is much the same as any menu you might find in any trattoria – into something so vital and impressive. Then, after the fourth or fifth meal, I understood. It’s the care taken that sets da Cesare apart. Real care without pretense or fuss, without swagger or caricature. The food makes even more sense when you talk to the owner, Leonardo Vignoli or his wife. Both are gentle, modest, passionate, attentive: a rare combination in Rome.  The wine list is as splendid as the food. As is the advice to help you navigate it.

As I paid the bill I asked Leonardo about the involtini, the two unassuming beef rolls that had been simmered tenderly in tomato sauce, maybe the nicest I have ever eaten (and I have eaten a few.) ‘Thin slices of good beef, well seasoned with salt, pepper and garlic wrapped around impossibly thin batons of carrot and celery and then simmered gently in tomato for an hour and a half‘ was his advice. ‘How would I know they were done?’ I asked. ‘Touch and taste‘ was his reply. Then he was gone – politely of course – back into the kitchen and I was left with a queue of questions trailing down my throat.

My first attempt was acceptable. My second very reasonable. My third attempt at involtini however, was a resounding success. Not quite reaching the benchmark set by Da Cesare, but nearly. Ask your butcher to cut you 10 thin slices of beef – rump or chuck is ideal. Season the slices prudently with fine salt, freshly ground black pepper and very finely chopped garlic if you so wish (I don’t.) Position a fat bundle of painfully thin carrot and celery batons at the bottom of the slice and then roll, tuck and roll until you have a neat parcel. Secure the roll lengthways with a toothpick. You brown your involtini in hot oil, nudging and turning, until they are evenly coloured and then you cover them with wine and tomato and simmer for a good long while.

The tomato reduces into a dense, flavoursome sauce and the beef rolls – with their neat bundle of savory – are simmered into tenderness. I wouldn’t have given these involtini a thought (never mind a second glance) before coming to live in Rome. Old-fashioned, boring and just damn fuddy-duddy I might have mumbled. Little did I know. Made carefully with good ingredients, they are simply delicious, richly favoured and well, very Roman. And the word involtini? It comes form the verb avvolgere (to wrap) so literally translated means, a little thing that has been wrapped.

Of course involtini work well as part of a Roman-style lunch. That is; a tasty antipasti, a modest portion of pasta and then a roll (or two) served alone on a white plate with nothing more than a crust of bread to scoop up the sauce. They are also good in a more English manner, that is beside a pile of extremely buttery mashed potato (what isn’t?) Roll with it.

Involtini al sugo  Beef rolls in tomato sauce

Inspired by the involtini at  Cesare al Casaletto with advice from my butchers at Sartor.

serves 4 (two each with two extra to squabble over)

  • 1 large carrot, peeled and cut into extremely thin batons (roughly the same length as the beef is wide)
  • 1 large stick of celery cut into extremely thin batons  (roughly the same length as the beef is wide)
  • 10 thin slices of beef (3mm or so) – rump or chuck is ideal
  • salt
  • freshly ground black pepper
  • a clove of garlic, finely chopped (optional)
  • 3 tablespoons of extra virgin olive oil
  • a small glass of white wine or red wine
  • 500 g tinned plum tomatoes coarsely chopped or passed through the food mill

Peel and then cut the carrot and celery into extremely thin batons roughly the same length as the beef slice is wide.

Take a slice of beef, lay it flat on the work surface, season with salt, pepper and very finely chopped garlic if you are using it. Again, I don’t use garlic. Place a bundle of carrot and celery at the bottom of the beef slice and then roll the beef around the batons, tucking the sides in if you can, until you have a neat cylinder. Secure the roll with a toothpick along its length.

Warm the olive oil in a heavy based saute pan. Add beef rolls, and cook, turning as needed, until browned on all sides, which will take about 6 minutes.

Add the glass of wine to the pan, raise the heat so the wine sizzles and evaporates. Add the tomatoes and stirring and nudging the rolls so they are evenly spaced and well coated with tomato. Bring to a boil, and then reduce the heat to medium-low. Cook the rolls covered partially – gently stirring and turning the rolls a couple of times – until meat is cooked through and tender which will take about 1 and a half – 2 hours. Add a little more wine or water if the sauce seems to be drying out during the cooking.

Lets the rolls rest for at least 15 minutes before serving with a spoonful of sauce and some bread.

The case of the pudding

I have a book called English puddings Sweet and Savory by Mary Norwak. Actually it isn’t my book, it’s my dad’s, a gift from my mum to her pudding devoted husband. Dad – it will be returned. It’s a glorious little book, part history, part recipe book and part rhapsody on the noble treat that is English pudding. I’ve spent the last few days lost in fools, flummeries and frumenty, in thoughts of thin cream pancakes scented with orange flower water, tipsy cakes and trifles, in hungry contemplation of apricot tansy, spiced cherries and Mrs Wightman’s delicious sauce.

Uncharacteristic behaviour I know. For although I am most definitely my father’s daughter: height and shortsightedness, views on breakfast and taking the bus, Elvis Costello and fractious Philip Larkin, I don’t usually share his intense passion for pudding. That’s not to say I don’t enjoy a spoonful or slice every now and then, I do. I just don’t save space or get unduly excited about pudding. Well not usually.

I pulled The book of English puddings from the shelf to cross reference a recipe that had caught my eye in Claudia Roden’s The Food of Italy called tartarà dolce. Always on the lookout for connections and similarities, a sort of inept Miss Marple contemplating evidence in old recipe books, the recipe for tartarà dolce or almond pudding seemed familiar. On opening my dad’s treasury of puds at chapter 3: Custards, creams and fools, I realised why! Tartarà dolce, an old farmhouse recipe from Piemonte in northern Italy, is almost identical to an old English recipe for almond cream I’d bookmarked a while back.

Of course there is sense to this gastronomic likeness, reasons why two such different places have almost identical dishes. Sense and reasons comprehensible even to an incompetent detective like myself (that said, I did single-handedly resolve the case of the missing gorgonzola last week: it was Ms Roddy, with a cheese knife, in the kitchen.) The Greeks are credited with the invention of custard; that is milk – whether it be cow’s, sheep’s or almond – thickened with eggs. The Romans, great keepers of domestic fowl, borrowed the idea. The Normans too. Both of whom brought these ideas to England. Medieval recipes in both English and Italian recipes books note the delicate custards and creams of the wealthy (often scented with spices and thickened with almonds brought by boat from the Mediterranean,) while folklore gives us clues about the elemental and sustaining dishes of those of more modest means.

It was timely connection too. I’ve been meaning to write about a custard-like pudding here for a while. I was toing and froing between something Italian: zabaglione (whipped eggs yolks, sugar and Marsala wine) or Creme di mascarpone (mascarpone cheese with egg yolks, beaten whites, sugar and an unruly slosh of rum) or something English: honey syllabub (double cream, sherry, clear honey) or the irresistibly named suck cream (cream, sugar, egg yolks and white wine.) Then there was this, a recipe common to both here and there, a gentle egg custard scented with lemon zest and thickened with both sweet and bitter almonds! Almond cream or tartarà dolce it would be.

Having separated the eggs (and set the whites aside while mumbling I will, I will make meringues! I will not watch you slither shamefully down the plughole on Sunday) you put the yolks and sugar in a bowl suspended over a pan of gently boiling water. You stir until the mixture is as pale and smooth as Tilda Swinton and then you add the milk you have warmed with the lemon zest. You keep stirring diligently, figure of eighting and beating as best you can with a wooden spoon (a metal balloon whisk would make the mixture too frothy.)

Once the mixture has thickened a little – not much though, it should coat the back of the spoon in much the same way as single cream – you add the ground and chopped bitter almonds. You stir and stir. The almond cream is ready when the mixture is as thick as double cream but still pourable, at which point you divide your almond cream between four glasses or ramekins.

Luca and I ate a glassful immediately while sitting on the kitchen floor. I spend rather a lot of my time on the kitchen floor these days! Alas no! I’m either wiping, weeping, picnicking, arranging farm-yard animals or constructing some sort of tiny transport system. Sat on the floor eating a warm, softly set custard-like-cream. A custard-like-cream given substance by almonds, a tart lift by lemon zest and marzipan whiplash by bitter almonds.

There is something othertimely about this pudding. It’s adaptable too, one moment an elegant, scented cream fit for a fine table, the next a wholesome, nourishing pud at ease in a rowdy family kitchen or a cramped Roman one in April.  Ah yes, what an excellent thing is an English/Italian pudding I might have thought if I was Dr Johnson or hadn’t been quite so busy supervising an over excited 18 month old brandishing both our spoons and a glass of sweet cream pudding.

We ate another at lunchtime, chilled, which meant it was another thing altogether; more firmly set, the flavours settled but more pronounced without the warmth. It was maybe even more delicious! I think almond cream would be nice with shortbread or sable biscuits. Now If you’ll excuse me I need to go and investigate the case of the missing telephone. I have a horrible feeling the child did it, with a splash, in the bathroom.

Almond cream, Almond pudding or Tartarà dolce

Adapted from English puddings Sweet and Savory by Mary Norwak and Claudia Roden’s The Food of Italy

serves 4

  • 4 egg yolks
  • 75 g fine sugar
  • 500 ml whole milk or single cream
  • the zest of a large unwaxed lemon
  • 100 g ground almonds
  • 6 bitter almonds finely chopped or a few drops of almond essence
  • a few drops of orange flower water (optional)

Beat the egg yolks together with the sugar in a bowl sitting over boiling water until smooth, pale and creamy. In a small pan mix the milk and the lemon zest, bring to the boil, cool slightly and then add to the egg mixture which is still balanced over boiling water.

Keep stirring the mixture until it thickens (it will only do so a little.) Add the almonds, essence and orange flower water if you are using it and continue to cook, stirring occasionally, until the mixture has become a thick cream. Pour into glasses or ramekins. Serve warm or cold.

Reciprocal roasting

Of course I thought Rome was glorious, but I didn’t want to stay. A month, three at most, then I’d take a train back to Sicily, finish the clockwise journey I’d interrupted, before moving even further southwards-somewhere. Then about halfway through that first reluctant month, April 2005 to be precise, urged by my architect friend Joanna, we visited possibly the most Roman of Roman quarters: Testaccio

Approaching Testaccio for the first time as we did by bus, lurching from Lungotevere into via Marmorata then swinging sharply into Via G. Branca, I was caught off guard. Linear and grid-like, the blocks of undistinguished looking 19th-century buildings seemed hard, passionless even, after the delectable warren of terra-cotta hued medieval alleys, the exhilarating sprawl of imperial ruins and the curves, courtyards and staircases of Borromini we’d been lost in.

Disoriented, we stepped off the bus into broad and busy Via G. Branca. Joanna was already engaged, her eyes darting eagerly, words like ‘Public housing, elevations, detail, brickwork, internal courtyard, community, fascinating’ tumbling from her lips. We walked, wandered really – the best way and invariably a happy adventure in Rome – down tree-lined vie, past tenement blocks and clusters of chattering signore, peering into vast internal courtyards, sneaking up well ventilated stairwells, pressing our noses up against the frosted glass windows of local tratorrie, all the time Joanna mumbling and making notes.

The hard lines seemed to soften and the streets – although always neatly aligned – narrowed and relaxed as we moved into the heart of Testaccio. We watched a wicker basket being lowered from a fifth floor window, shopping deposited within, before the basket was hauled back up and swallowed by lace curtains. Just as our eyes were becoming accustomed to the distinguished late 19th century architecture, four arches of an ancient edifice, as if forlorn giants, loomed up before us. We gazed upwards at the sculpture of a winged god punching out an innocent bull atop the defunct slaughter-house and downwards at the expanse of cobble stones between which were wedged innumerable cigarette butts. We were jostled and elbowed, awkward tourists we, by the commotion and the rowdy market life of Testaccio. We sat at one of the small round tables outside Zia Elena and drank ill-timed cappuccini while Joanna confirmed what I was starting to suspect, Testaccio was charismatic and captivating, rudely real and remarkable, that I should find a flat here.

I’m still here of course. Once that English girl, now very much (and quite happily) that English woman, less idealistic and romantic but no less enamoured with my adopted home. My mum is visiting this week and at this very moment pushing my small boy, a half Testaccino, around the same streets Joanna and I pounded. Meanwhile I sit here at my red table looking out onto the cavernous courtyard of my building, which just happens to be the first building I noted as the bus swerved into Testaccio almost eight years ago to the day.

Lately I’ve been having nice conversations about why I came to Rome, why I stayed and why I cook and write in the way I do. My answer is almost invariably, Testaccio. I stayed in Rome even though I’d no intention of doing so because of Testaccio, a quarter with an identity and character stronger than anyone I know. Of course I’d cook wherever I was, but I cook in the way I do because I’m here and influenced by the very particular cooking of this very particular area, by the local market and the shops I visit every day. Before you roll your eyes at this, I should note that many of the shops and most certainly the market itself – which has recently moved – are a far cry from any rustic, whimsical or mediterranean idyll you might imagine, for although charming, they are straightforward, traditional, ordinary.

Straightforward, traditional, ordinary, such pleasing words and appropriate ones too when it comes to describing Roman food. Another thing that’s kept coming up in our conversations this week, is how aspects of Roman food have much in common with northern English food, the food my parents were raised on and an important part of my kitchen heritage. Both are straightforward, traditional, ordinary. I like ordinary. Homely cooking rooted in tradition. Cooking that makes good use of lesser cuts which require thought, resourcefulness and skill if they are to be transformed into something sustaining and satisfying. The enterprising use of the other parts of the animal, parts that would otherwise be wastefully and scornfully discarded: tripe, tails, feet, sweetbreads, liver, lungs (don’t squirm they are absolutely delicious if cooked well.) There is a nice symmetry for me that the iconic Roman dish: Coda alla vaccinara, braised ox tail with celery, bears an uncanny resemblance to a Lancastrian dish, a taste of my childhood and culinary heritage: ox tail stew.

I am waiting to make Coda  alla vaccinara with Leonardo so that was out. We considered boiled beef, one of my favourites and another dish with which to observe this Roman / northern English connection – cooking for me is all about making connections. Do you know the recipe I have for Roman Lesso is almost identical to the recipe for boiled beef and carrots my northern family would make? Then the sun came out and the discussions turned to spring, Easter, and celebratory lunches in both Rome and Manchester. Not that it was Sunday. Mum reminisced and I ruminated while we walked from my flat in via Marmorata to the market. By the time we reached my butcher we had decided: roast lamb with potatoes on Wednesday it would be.

Alice would have roasted half a leg or half a shoulder, English lamb being older, bolder and larger. In Rome the lamb roasted with potatoes is – more often than not - abbacchio or suckling lamb. A small, slim leg with ribs and kidneys attached is perfumed with fresh rosemary and garlic, then cooked in slow oven with pieces of potato anointed with strutto (lard) or olive oil until the potatoes are golden and crisp, the meat tender and falling from the bone.

We English are mocked for our plate piling and tempestuous sea of gravy, especially on Sundays. My Granny Alice, my mum’s mum and my second namesake, was not a fan of such plate chaos. She would have served her lamb as they do in Rome, a nice slice or two, beside it a couple of burnished potatoes, over it a spoonful of the juices from the bottom of the pan.

I’m almost certain you have your own recipe for roast lamb with potatoes, this post is nothing more than a long-winded reminder. Below is the way I cook lamb, that is: in a rather Roman manner with distinctly British sensibilities. On Easter Sunday we will start with fave e pecorino followed by a modest slice of lasagne ai carciofi and then, for secondo, this simply roasted lamb. We will then adopt somnolent postures on the nearest soft furnishing, cover our faces with the Observer and doze.

serves 4

  • 2 kg very young, lamb. Ideally leg with ribs and kidneys
  • lard or extra virgin olive oil
  • 3 cloves of garlic
  • several sprigs of fresh rosemary
  • salt
  • freshly ground black pepper
  • 1k g potatoes

In Rome they slash the leg of lamb deeply (but not cutting through entirely) creating thick slices.

Lay the lamb in a roasting tin large enough to accommodate it with the potatoes. Peel and slice the garlic and break the rosemary into small sprigs. Rub your hands with lard or olive oil and then massage the lamb inserting the slivers of garlic and sprigs into the slashes as you go. By the time you’ve finished the lamb should be glistening and scented with garlic and rosemary.

Smear a little lard or oil on the base of the tin and then lay the leg skin side down. Season with salt and black pepper leave to rest for 30 minutes or so.

Set the oven to 180° / 350F.

Peel the potatoes and cut them into quarters, rub them with lard or olive oil (hands are best) and then arrange them around the lamb. Season the potatoes with a little salt.

Slide the lamb into the oven. Cook for about an hour – basting every so often and turning the leg twice – or until the meat is very tender when prodded with a fork. Very young lamb might need less, older lamb more. Some people like to pour a glass of white wine over the lamb half way through the cooking time, In this case I don’t

Allow the meat to rest, covered loosely with foil, for at least 10 minutes before serving in thick slices with a potato or two and a spoonful of the sticky juices from the bottom of the pan.

Layer upon layer

Lately I’ve been thinking about layers. Mostly mundane ones: clothes, coats and covers, the management of which occupies a ridiculous amount of my time, what with a child and March’s capricious climate. Not that this ridiculous amount of time ever seems to pay off. I am, it seems, destined to always get it wrong and we end up either hot and bothered, cold and cantankerous or simply soaking wet.

My almost impressive ability to misjudge meteorological matters was less important when it was just me. But now I have a small boy clamped to my chest or clutching my hand, a small inappropriately dressed 18 month-old boy whose every sniff and sneeze precipitates a chorus of street tutting and disapproval –  ’Non si fa cosi signora! Povero bambino‘ –  I wish I could judge the layers better! At least once in a while.

Inappropriately dressed we’ve been walking in search of less mundane and more intriguing layers. Armed with Elizabeth Speller’s book of ten guided walks – of which we have now completed seven –  we’ve been discovering Rome anew, observing layer upon layer of her glorious and inglorious past and her shambolic and sublime present. Of course the great baroque facades, imperial ruins and palazzi of renaissance princes are stupendous. As are the tiny piazze, labyrinthine cobbled alleys and half forgotten fountains. But it’s the unexpected and incongruous that really arrests me, when fragments, as ES puts it, ‘burst forth.’

A single arch of an ancient edifice rising forlornly between two 19th century apartment blocks, a 2000 year old column holding up a tenement kitchen, a routine hole for a routine check by the Roman water board that has been appropriated by archeologists, a mechanics workshop built into an ancient pile of broken pots, an ancient arch – onto which an unsupervised dog is relieving himself – marooned in the middle of the pavement beside a busy road. Antiquity bursting forth and then just sitting there nonchalantly while perfectly modern lives roar or meander by. Layer upon layer.

At home there have been layers of lasagne.

It has taken me a year to lift the pasta maker out of its box and clamp it to the work surface. I’m as proficient at procrastination as I am meteorological misjudgment. If the truth be known the chrome plated steel Imperia would still be languishing in cardboard at the bottom of the cupboard were it not for Paola: my friend and lasagne teacher. I met Paola a few years ago when she hosted a party for our mutual friend Sergio in her garden. It had been noted that we’d get on and that Paola was an excellent cook, We did and she is, particularly when it comes to la lasagna.

Before coming to Italy I was deeply suspicious of lasagna, traumatized by too many encounters with thick yellow sheets that managed  - quite impressively – to be both over and undercooked, big bulging layers of very busy ragu, floods of floury white sauce and cheddar crusts. Thud, squelch, indigestion. It was awful. I was scarred for lasagna life. So scarred, that even the more refined, relatively well executed lasagna left me unmoved. I decided it was best that I just let lasagna lie.

I almost spurned the slice Vincenzo brought over to me during the party. Then I realised it was unlike any lasagna I’d ever seen. Paola rolls her fresh handmade egg pasta as thin as thin can be, which renders it light, extremely delicate and allows it to be the absolute protagonist, appearing in eight or nine layers. The sauces and others layers. whether they be a rich ragu, sautéed vegetables, ricotta, mozzarella, parmesan, a limpid white sauce are all merely supporting artists. Very important supporting artists mind: proud, present and bestowing deep flavour, but never swamping or overwhelming the star: the almost transparent leaves of pasta. The slice looked a little like a closed accordion, it managed to be delicate and imponderous and yet richly flavored and substantial. I ate three slices. I then lay in a somnolent posture under a tree.

Some years later I’m standing in Paola’s kitchen in her house near Velletri, a town about an hour south of Rome. It is a vast enviable space, with a pale marble-topped work surface, wood burning stove and wooden table long enough for twelve. It’s a comfortable and unpretentious space though, with nothing twee or themed about it, no suggestions of whimsical rustic. I note that I could spend a lot of time in this kitchen. We drink coffee and then roll up our sleeves, tie on our aprons and make lasagne.

First we make our dough, kneading methodically and rhythmically until it’s smooth and soft as putty. Then we position ourselves bedside Paola’s chrome Imperia, launch a blizzard of flour over the worksuface and then begin passing the pieces of pasta between the metal rollers.  9 pieces, passed one by one through the six settings. That’s 54 rounds. 54 raptious rounds as rolling pasta is one of the nicest kitchen tasks I’ve undertaken in a very long time.

It never ceases to amaze me how a good and patient teacher can make even the most complicated of tasks seem entirely manageable and you – the student – feel capable and just a little chuffed. Not that rolling pasta is particularly complicated. You do need guidance though and some sound counsel about cutting, folding, feeding, dusting with flour and how to manage the ever-increasing lengths of soft, egg lasagne. I’ve tried as best I can to include Paola’s guidance in the recipe below. I do hope it is helpful. I would encourage you to find a teacher too, a patient and capable one.

And so the filling.  Being, as it is, the season for the tender-hearted warrior of the vegetable world, Rome’s glorious globe, a lasagna with artichokes and ricotta seems appropriate, at least it did in our flat last Monday. Having made your pasta and set it aside to rest, you set about preparing your other layers. First the artichokes, which need trimming, slicing and then cooking in olive oil and wine – a slow sauté/braise really until they are extremely tender. Extremely tender: a soft, creamy mush really but with some discernible pieces.

Next you make a panful of béchamel, which needs to be loose, fluid and pourable. And finally you whip the ricotta into a light, lactic cream with whole milk and season it prudently. It’s also important to eat at a little of your ricotta cream on toast while you watch your son putting oranges and your purse in the washing machine.

Having rolled the pasta as thin as you dare, you need to par-boil it. A vast pan of well salted, fast boiling water is important, as is an equally large bowl of cold water and plenty of clean dry tea towels arranged strategically all over your kitchen  - which will make it feel a little like a chinese laundry. Bold and brave moves are best. Drop five sheets of lasagne into the water. Once the water comes back to the boil, let the sheets lumber and roll for a minute before scooping them out as you would a slippy, wriggling toddler from a bath tub, plunging them into the cold water (to halt the cooking and prevent sticking, the curse of long, exquisitely thin lasagne) and then spreading them out on the tea towels.

Now is all that’s left is to assemble, to put layer upon layer. A layer of Pasta, a layer of artichokes, béchamel and parmesan, another of pasta, the next of artichokes, ricotta and parmesan, another of pasta and so and so and so. Use scissors to snip the pasta into shape and do not be afraid of patches. Keep in mind the layers of artichoke, ricotta and bèchamel should be scarce and subtle sploges rather than a dense layer, supporting, bestowing flavour but never dominating. 15 minutes in the oven and then a 15 minute rest.

Layer upon layer for lunch. And what a good lunch: delicate and imponderous and yet richly flavored and substantial. A lunch during which I felt proud as punch. Paola ti voglio bene. This is may well become my Sunday best.

This recipe is – like most of my posts – long and possibly rather daunting (and/or trying.)  The length is due to all the simple but numerous phases, please don’t let it deter you. Of course time, effort and organisation are required! But it is undeniably, irrefutably, assolutamente worth every minute, knead, rock and roll, chop, whisk and blooming-lovely layer.

Lasagne ai carciofi e ricotta – Artichoke and ricotta Lasagna

Inspired by Paola, with sound advice from Marcella Hazan and Franco and Ann Taruschio

serves 6

for the pasta

  • 300 g farina di semola (semolina flour) or plain pasta flour
  • 3 medium-sized free range eggs
  • a pinch of salt

for the artichoke layer

  • 8 large /10 medium globe artichokes
  • extra virgin olive oil
  • salt
  • a glass of white wine

for the bèchamel sauce

  • 50 g butter
  • 50 g plain flour
  • 700 ml whole milk
  • salt
  • black or white pepper
  • nutmeg

For the ricotta layer

  • 300 g ricotta
  • 150 ml whole milk
  • salt
  • black pepper

and

  • 100 g parmesan cheese
  • olive oil
  • salt and pepper

Begin the pasta.  Make a mound of flour on the work surface and scoop a deep hollow in the center. Sprinkle over a pinch of salt. Break the eggs into the hollow and then using your fingers beak the yolks and start working the egg into the flour. Bring the dough together until you have a smoothly integrated mixture.

Knead the dough, pushing it forward with the heel of your palm. Fold the dough in half, give it a half turn and press it hard against the heel of your palm again. Knead for a full eight minutes by which time the dough should be smooth and soft as putty. Cover the pasta with cling film and set it aside.

Prepare the artichokes. Prepare the artichokes by first pulling away the darker tougher leaves, tugging them down towards the base of the artichoke and snapping them off just before the base. Then using a sharp knife, pare away the tough green flesh from the base of the artichokes and the stem. As you work, rub the cut edges of the artichoke with a cut lemon or sit them in a bowl of acidulated water. Slice away the stem and cut it into thick match sticks and then cut the bulb into 8 wedges. In a heavy based pan, warm the olive oil and then saute the artichoke pieces briefly. Add a pinch of salt and the wine, stir and reduce the flame so the artichokes bubble gently. Cover the pan and allow the artichokes to steam/braise for about 20 minutes or until they are extremely tender. The artichokes must not dry out, but stay extremely moist so add more water if necessary. Mash the artichokes gently with the back of the wooden spoon so they collapse into a creamy mush but with some discernible chunks.

Make the béchamel. In small pan heat the milk and bay leaf until it almost reaches boiling point. Remove the milk from the heat and then leave to sit for 5 minutes. Heat the butter in a heavy based pan; as soon as it starts to foam, whisk in the flour. Keep whisking steadily for 2 minutes, then remove the pan from the heat. Add a little of the milk and whisk until you have a smooth paste. Return the pan to the heat and then add the rest of the milk, whisking continuously until the milk boils. Season with salt, black pepper and a grating of nutmeg. Lower the heat and simmer, stirring and whisking frequently for about 10 minutes or until the sauce is thick.

Prepare the ricotta. Using a fork beat and whip the ricotta with the milk until you have a soft, light paste, season with salt and  black pepper.

Roll and cook pasta. Cut the ball of pasta into 9 pieces (the general rule is the number of pieces should be 3 times the number of eggs. So 3 eggs = 9 pieces). Sprinkle the work surface with flour. Set the pasta machine to the widest setting. Flatten one of the pieces of dough by pummeling it with your hands and then run it through the machine. Fold the pasta as you would an envelope by bringing the two ends over each other, so the piece is a third of its length, and run it through the machine again. Repeat with the other 8 pieces.

Close the gap in the rollers down by one notch and run the pasta pieces through one by one. Continue thinning the pieces progressively closing down the notches one by one until the pasta is as thin as you want it. Paola rolls her pasta through all six settings so it is impressively thin. You may need to cut the pieces in half.

Bring a large pan of well salted water to a fast boil. Prepare a large bowl of cold water. On your largest work surface spread out clean tea towels. Lower 5 sheets at a time into the water. Once the water has come back to a fast boil allow the sheets to cook for 1 minute before scooping them out, plunging them into the cold water and then laying them out on the clean tea towels. Repeat until all the sheets are cooked.

Set oven to 200 ° and grate the parmesan.

Assemble la lasagna. Rub a little olive oil and a smear of béchamel over the base of the tin ( a 34 cm tin is ideal). Arrange a layer of lasagne first, try not to have more than 6 mm of overlap, use scissors to cut the lasagne. Spread a thin layer of artichoke on the pasta, then a layer of béchamel and sprinkle over a little parmesan. Now another layer of pasta, another (thin) layer of artichoke and one of ricotta, more parmesan and a little olive oil. Repeat putting artichokes and parmesan in each layer but alternating bèchamel and ricotta. You should finish with the eighth layer of pasta. Spread over the last of the béchamel, sprinkle with parmesan and drizzle over a little olive oil.

Bake the lasagna in the pre heated oven for 15 minutes by which time it should have a golden crust and bubble at the edges, Allow the lasagna to rest for at least 15 minutes before bringing to the table and serving directly from the dish.

Eat layer upon layer.

Pleasingly bitter

Cicoria is bitter. Like spinach that’s lost a lawsuit. It’s also tangy, slightly metallic, wild and grassy tasting. The vegetable equivalent of a frolic in a field with a handsome heavy metal drummer who forages and writes poetry in his spare time. There’s also sweetness lurking in the serrated leaves and plump stem, some say spiciness too. But it’s the bitterness that prevails, and it’s for this reason I love cicoria. Which isn’t really surprising given how much I like bitter in my pint glass, my carmine coloured aperitivo, my amaro, my marmalade, my salad, my chocolate, my coffee, my life.

Unaccustomed and unqualified as I am, I going to try to put cicoria into some sort of biological and historical context!  I’ll keep it brief I promise. Then we can proceed as usual! You know the routine, I ramble on about running away to Italy and my tedious existential crisis, detail the Roman meal during which I first I ate cicoria and describe how I succumbed to the advances of the man at the next table – eat, pay, shove – before giving you a recipe.

The cicoria I’m talking about, the dark-green, narrow-leaved shoot above, is a variety of the genus Cichorium intybus called Dentarella or –  for less tongue twisting - Italian dandelion or Cutting chicory. It looks, as you’ve probably noticed, a little like an oversized dandelion with its glossy, slightly serrated leaves. Other varieties of this genus you might be familiar with are puntarelle, deep-red radicchio or the milky white bulbs of witloof we British call chicory. Although related, cicoria is not to be confused with endive, curly endive (called chicory in the US), chicoreè frisèe or escarole. Baffled?  I know!  This is a topic beset by considerable confusion.

Cicoria is the cultivated relative of cicoria selvatica or wild chicorya food foraged and favored since Antiquity. Wild cicoria still thrives in parks, lay-bys and the undulating countryside surrounding the Eternal city. This interview with Sarah May makes for lovely listening for the cicoria curious amongst you.

In Rome it’s still not unheard-of to find a rogue market stall with an heap of foraged cicoria selvatica! Wild tangled greens: primitive, savage and reeking of another time. But these days you’re most likely to find cultivated cicoria, like the bagful at the top of this post, cicoria as bouncy, unruly and gloriously green as a classroom of five-year olds after a sugary snack and a lesson painting pictures of grass.

Modern Romans, even tiny ones, covet and consume cicoria as passionately as their forefathers, growing, collecting, buying and eating it in enormous quantities. More often than not it’s blanched or boiled – which soothes the bitterness – drained scrupulously and then sautéed or ripassata in olive oil, garlic and possibly chilli: cicoria in padella. It’s then eaten as a contorno (vegetable side dish) or piled generously on warm pizza bianca.

And the meal?  It was nearly eight years ago at a small, idiosyncratic trattoria in Testaccio called Augustarello. A trattoria that has recently reclaimed its rightful position as my favorite place to eat in Rome. Sitting at one of the dozen or so tables in this tiny locale with its frosted windows (to keep prying eyes out) and its bold open kitchen (to allow prying eyes in,) I first ate a dish of cicoria in padella.

There was no epiphany or foodquake, just a glistening tangle of dark-green cicoria: tangy, slightly metallic, wild, grassy and a beautifully bitter balance to the citrus tinged artichoke and tonnarelli cacio e pepe I’d just eaten and the sweet torta della nonna that was to follow. There was sour, salty, unami, bitter and sweet and Rachel was – unsurprisingly – sated and (extremely) replete. I was also cicoria convinced and converted.

Then later that summer in Apulia – the high heel of Italy’s boot – in the company of my love and his motley crew, I ate a plate of Fave e cicoria, an iconic, poor and simple combination bourne out of necessity and very good taste. The fave (broad beans) in question were peeled and dried fave, or fave secche, another food from antiquity, ivory coloured slivers of beans, like misshapen tiddlywinks.

The fave had been soaked, drained and simmered idly until they’d collapsed into a soft, soupy mush, a pale puree reminiscent of chickpeas, chestnuts and white beans. Fave too have a discreet bitterness about them. It’s a pleasing bitterness though, which compliments their soft, floury and nutty nature and elevates it into something particular and delicious. The cicoria - sweeter and plumper than its Roman cousin – was simply boiled, drained and dressed with local  oil.

The plate, half fave-half cicoria, half ivory-half green, half-elemental humus-half bittersweet leaves anointed with golden extra virgin olive oil, seemed, on that hot and heavy night near Leece, a near perfect plate.

This is an extremely simple recipe, but one that requires good ingredients and practice, especially when it comes to getting the consistency of the fave right. They should be soupy really and eaten with a spoon. I for one, still need practice. Bread and wine are important here – aren’t they always – as is excellent olive oil.  Now about that frolic!

Fave e cicoria

serves 4

Adapted from Le Ricette Regionale D’Italia,  Eleonora’s recipe, Elizabeth’s recipe and inspired by this

  • 500 g fave (dried broad beans)
  • 1 kg cicoria (or other bitter greens: cavolo nero, dandelion or leafy chicory)
  • olive oil
  • salt

Soak the fave in plenty of cold water for 8 hours or overnight.

Drain and rinse fave.  Put fave in a pan, cover with cold water and bring to the boil. Skim any white foam what rises to the surface. Lower the flame and simmer fave for about an hour or until they are very soft, tender and have collapsed into a thick mush. The consistency should be that of a very thick soup: dense and creamy but still fluid and spoonable. You may have to add a little more water. Season generously with salt.

While the fave are cooking soak the cicoria in several changes of water, discarding any wilted or bruised leaves and trimming away any very thick, woody stalks. Put the cicoria in a large pan with nothing but the water that clings to its leaves, cover the pan and cook over a medium flame until it has collapsed and is tender. This should take about 5 – 8 minutes depending on the freshness and age of the cicoria.

Drain the cicoria and once it is cool enough, squeeze and press it gently with your hands to eliminate as much water as possible.  Warm some olive oil in a saute pan – with a clove of garlic if you wish – and add the cicoria and a pinch of salt. Stir and turn the cicoria in the oil until each leaf is glistening.

Serve a pile of cicoria either beside or over a generous serving of fave with a little of your best extra virgin olive oil poured over the top. Serve with bread or toast and wine.

Did I mention we have a school in our courtyard? It’s a very small school, a large room with appendages really, in the middle of our vast courtyard. A vast, cavernous courtyard onto which more than 100 apartments peer. We also have palm trees, seven of them, a dozen blooming oleander and a gangly pine which tempts sparrows and the occasional exultation of larks. There are also two pizzeria in our midst, the back of them at least, in the far left and far right hand corners, which means all sorts of hullabaloo, wood oven girding, pizzaiolo hollering, chair scraping, cutlery clinking and general rowdiness. But only after seven pm, so long after the school bell has rung. Long after 24 five-year olds have scattered like excited marbles across gravel and into arms and Luca and I have finished making our lunch or – rather uncharacteristically - our cake.

Cake making wasn’t on the agenda. Actually nothing was on the agenda, what with no lessons, both of us being out of sorts and me still reeling from the fact that the evening before, raw and ragged discussions were had and I managed to say things that have needed saying for far too long, A day in, on and around the bed recuperating with Quentin Blake, Bruno Munari and orange jelly was the plan. Then at about ten thirty, as the moka rattled to a climax for the second time, the sun poured, children squealed and my son’s kitchen pan drumming confirmed considerable recovery, I decided both a walk and a cake was in order.

We walked the other way along the river. Meaning instead of imperial arches, lofty columns and clusters of cupolas we pounded through another Rome. Gasworks, a slaughter-house, a defunct port and derelict storage silos were our cityscape, harsh monuments all, but eerily beautiful ones and witnesses to a slow, stealthy regeneration trying to pervade this part of the Eternal city. As we walked back  I made mental notes of buildings that might suit us and realised, rather surprisingly, that the thought of a new flat near but not actually in Testaccio was not only manageable but comfortable.

I’d made a list: oranges, fine polenta, ground almonds and cardamom pods. First the oranges, from the market, two kilo’s of perky leaved, dusty orange orbs, not a wisp of wax in sight. We ate two immediately! Which wasn’t a particularly prudent idea for an over excited, sling-suspended 17 month old and his ill prepared mother who was wearing her nicest jacket. Orange scented, sticky fingered and stained we visited Laura at Emporio delle spezie, an indispensable cubby hole of a shop, selling every conceivable herb, spice and condiment. A kilo of fine polenta, 500 g of ground almonds, a bag of cardoman pods and we were all set.

Now I’ve think we’ve established that as much as I like cake – unfussy, damp, scented and absolutely no frosting please even on my birthday – I don’t make them very often. Cakeless weeks fly by and then, mighty boosh, I’m cakestruck and tins are greased, and eggs cracked. For a long time plain madeira was my weakness, but over the last few years I’ve been seduced by cakes made with almond flour and scented with citrus. Dense, fragrant and sticky rounds, as much puddings as cakes. I tried and tested various recipes before settling on a lemon and almond cake and a clementine take on Claudia Roden’s marvelous orange and almond cake. I was content. Then this.

This being my friend Dan‘s cake, A cake based on Nigel Slater’s recipe in the Observer some years back that Dan – an excellent and generous baker and caker – made for a lunch a couple of Sundays ago. Forget everything I’ve said before, this is my cake. An almond, polenta, orange and cardamom cake that’s drenched, soaked and sodden with orange, lemon and honey syrup. It is, as you can see, unprepossessing and possibly the wrong side of burnished for many. But please don’t let this dissuade you, it’s ridiculously good: a dense, damp, deeply aromatic and heady affair.

Pretty standard practice, cream the butter and sugar, add wet ingredients: orange and eggs, and then dry ones: polenta, ground almonds and a teaspoon of baking powder. Last but not least you add the crushed seeds of 12 dusty green cardamom pods. As you grind the tiny black seeds you might well be transported somewhere else. For me that somewhere else is the medicine cabinet, as cardamom has something of Vick’s nasal spray about it. Then, as medicinal eucalyptus gives way to sultry floral citrus, I’m transported –  rather more romantically – to Mysore in Southern India some 13 years ago and a bowl of cardamom scented rice pudding eaten on a crowded roof top!  I’ve never talked about India have I? Which is extraordinary considering how much I love to harp on about it!  Another time!

The cake needs 30 minutes at 180° and then another 25 or so at 160°. It will be deeply burnished. Then – and this is the particularly nice bit – you bubble up a syrup of orange, lemon juice and honey to spoon over the still warm cake you have prudently picked all over with a strand of spaghetti. The cake: beautifully absorbent and pricked, obediently and obligingly soaks up the syrup in much the same way that I soak up my first drink of the day – sip, sip, woosh. Now you wait, a few hours if you can, wriggle the cake out of the tin, slice and eat.

Eat and be reminded of how well ground almonds work in lieu of flour: nutty, milky and of course oily which means the cake is almost rudely moist. Notice the polenta, it’s gritty, granular texture and how well that fits. The orange zest flecking the cake: warm, acerbic and aromatic, you’ll notice that too, as you will the tiny black specks of cardamom, at once eucalyptus, ginger and something sultry and unexplained. And then there is the glaze, a hot syrup of orange, lemon and runny honey that drenches the very heart of the round, soaking cake and crumb. This is my cake.

Of course a spoonful of very cold, very heavy cream, mascarpone, crème fraîche, vanilla ice-cream or Barbados cream (a lovely lactic concoction of greek yogurt, heavy cream and soft muscovado sugar) would all work beautifully here.

Almond, polenta, orange and cardamom cake with honey and citrus syrup

Adapted from Dan’s recipe which is in turn adapted from Nigel Slater‘s recipe in the Observer

  • 220 g butter
  • 220 g golden caster sugar
  • 3 eggs
  • zest and juice of a unwaxed orange
  • 300 g ground almonds
  • 150 g polenta
  • 1 tsp baking powder
  • 12 green cardamom pods
  • for the glaze: juice of two oranges, one lemon and 4 tablespoons of honey

Line the base of the cake tin with a piece of baking parchment. Set the oven at 180° / 350 F / Gas 4.

Cream the butter and sugar together till light and fluffy. You can do this by hand or in a mixer. Break the eggs into a small bowl and beat them lightly with a fork, then stir into the mixture. Carefully grate the zest and then squeeze the juice from the orange. Add both the zest and the juice to the mixture. Mix the ground almonds, polenta and baking powder together, then fold into the mixture.

Crush the cardamom pods and extract the little black seeds, grinding them to a fine powder. Add the spice to the cake mixture.

Transfer the cake mixture to the lined tin and smooth the top-level. Bake for 30 minutes, turn down the heat to 160 C/ gas 3 for a further 25 -30 minutes or until the cake is firm.

To make the syrup, squeeze the lemon and orange juice into a stainless steel saucepan, bring to the boil and dissolve in the honey. Keep the liquid boiling until it has formed a thin syrup (4-5 minutes).

Spike holes into the top of the cake (still warm and in its tin) with a skewer then spoon over the hot citrus syrup. Leave to cool, then lift out of the tin.

By eye not rule

Since my late teens I’ve kept a kitchen notebook. It would be nice to tell you that these notebooks: a well-worn but pleasing collection of soft volumes sit cheek by jowl on my bookcase, that it’s a collection I treasure and refer to daily. They aren’t, they don’t and therefore I can’t. For apart from the five most recent notebooks and a green diary from 1997, my motley crew of dog-eared loose-leaf pads and leather effect WH Smith jotters have either been lost in migration or languish – damp and curling at the edges – in my parents garage. There are also six years worth of Italian notebooks getting dusty in a box at Vincenzo’s. So much unfinished business! But now’s not the time to talk about that.

I’ve mixed feelings about the 16 years worth of notebooks curling in England! Which is why, despite weary pleas from my parents and countless opportunities, they remain exactly where they are. For amongst the recipes written, sellotaped and glued to the pages, descriptions of meals eaten, brief notes about stove successes and long laments about kitchen failures, the to make lists and meticulous plans for suppers that may or may not have happened, is a painful (and tedious) account of my then life in food.

Exuberantly documented periods of feast are all too often followed by tiresome accounts of restraint and abstinence. A pleasant seasonal list or carefully copied quote is probably followed by a raging diatribe about loathing food or myself for eating it. A fanfare to fruit cake is stifled by an ode to fasting. Twelve (very slim) notebooks dated from 2002 to 2004 chart – in painfully neat handwriting –  a joyless weighed and measured routine I’d rather forget. Notes about expansive meals are almost always followed by so much self-flagellation and malcontent it’s exhausting. Fad’s, fantastical allergies and fernickerty disordered eating is well documented.  Lost, forgotten, abandoned and curled. Quite right too.

Well almost. There were gems amongst the goulash of angst and self-flagellation. Real gems. Some of which I pulled, ripped and unstuck a couple of summers ago while sorting through the damp boxes. A series of recipes snipped from the Guardian in the late 90′s, handwritten recipes by Granny Alice and Grandma Phyllis, illustrated recipes for three almonds cakes from my Spanish neighbour, a pile of 1940′s pamphlets about herbs, three A4 pages of recipes from my time in India and the green notebook from 1997, they are all sitting here on my red table.

And so the green notebook. The one I kept whilst living in Camden Town and going to drama school. An angst free notebook – I was, I note on more than one occasion, extremely happy – almost entirely given over to notes, thoughts and several comical accounts of making pasta. I wish I could remember what precipitated this rash of research, kneading and rolling? A dinner? A book? A friend?  It wasn’t a trip to Italy or a man. I wish I could remember from where I copied the most bizarre pasta making advice. I suppose it doesn’t matter. Whatever or wherever, in the spring of 1997, when living in the small but well proportioned North London flat, the sound of evening trains through Camden cutting, I became temporarily obsessed with making pasta. I remember nothing about eating this pasta. I clearly did though! On many occasions, all of which are duly noted: Needs work! Dry dry dry! Rather hard and slightly indigestable! Try another flour!

Sixteen years later, in a small but well proportioned flat in South Rome, the green notebook – although providing entertainment – has been absolutely no help whatsoever in my latest attempt to learn to make pasta. Well except for one note that is. A note I’ve been given more times than I care to remember during my cooking life, and not only regarding pasta – by eye not rule.

By eye not rule. Of course there are rules, like using best semolina flour, working on a clean dry surface and adding a whole egg to the flour before adding the cold water when making cavatelli pasta. ‘It’s an unconventional egg‘ my teacher Daria noted while working the yellow yolk expertly into the equally yellow flour ‘As cavatelli pasta is traditionally made just semolina flour and water.’ An egg however – a trick taught to her by her mother – wether working with 200 g or a kilo of flour helps with manageability and elasticity.

Once you have worked the egg into the flour you can start adding the water, little by little, by eye not rule. Time of year, temperature of your kitchen, the flour, the size of your egg, your mood, your husband’s mood, these variables will all affect the quantity of water you use. Which bring us neatly to Daria’s second piece of advice.: practica (practice.) You can only learn and truly understand how much water is required to bring the ingredients together into a soft, putty-like-dough by practicing.

Our lesson took place a few weeks ago. Cavatelli is a traditional curled pasta shape from Daria’s home town in Puglia,where it’s also known as capunti. Having made a dough from grano duro (semolina flour), the unconventional egg and enough water, Daria taught me to knead. Did I mention how much I like being taught these days, I’m not sure where proud I-don’t-need-lessons Rachel has disappeared to. The heel of your palm does most of the work: pushing the dough forward, folding it in half, turning and pressing again. You should knead for about 8 minutes – again eye not rule – until the dough is smooth and soft as putty.

Cutting and shaping the cavatelli is, despite appearances, pretty straightforward. You need to cut the dough into thick matchsticks. Daria did this by moulding the dough into a rough round, then cutting this round into first strips and then matchsticks. To shape the individual cavatelli  you place your well-floured index, middle and ring finger against the far edge of the matchstick and then roll/flick your fingers towards you so the dough curls into a long arc with three in-dents. At every stage of the shaping, cutting and forming Daria launched a blizzard of semolina flour over proceedings to stop the dough sticking.

While I finished shaping the cavatelli, a deeply satisfying task once you master the press and flick required, Daria cooked some cauliflower until unfashionably soft. Having lifted the tender florets from their cooking water (which she left for the pasta) she then sautéed the cauliflower in an even more unfashionable quantity of olive oil before mashing it gently with the back of the wooden spoon until it surrendered into a soft, creamy sauce. A pinch of salt and a handful of chopped dusty-brown olives – surly and salty ones from Gaeta - finished the sauce off nicely.

I’d just like to pause and note how delicious well-cooked cauliflower ripassata in extra virgin olive oil, well salted and studded with olives is. This has been our lunch – give or take a piece of bread and lump of cheese – once a week since my lesson. Noted? Good! But back to the cavatelli. Under supervision I cooked the pasta in the cloudy cauliflower water. It took just minutes, the indented curls bobbing excitedly to the surface. Once cooked, the cavatelli was slotted-spooned into the cauliflower pan – a little of the pasta cooking water still clinging to the curls – stirred and served.

Now as you may or may not have noticed, I am very fond of vegetables – broccoli, crema di rapa, zucchini, broccoletti - that are cooked until extremely soft, turned in olive oil and then stirred into pasta. Such dishes have become a cornerstone of my diet and the saviour of my purse strings. This dish Cavatelli con cavolfiore e olive is my new favorite. The soft, somewhat shy sauce given courage by the feisty olives, collects in the curls and coats the tender pasta.

‘This is a good pasta for a complete beginner’ Daria noted. I felt myself bristle, the pride surge through my veins. ‘Well I’m not exactly a beginner.’ I was about to splutter.’ I’ve lived in Italy for 8 years now and I’ve been making pasta since 1997.’  Then I remembered. ‘Yes it is.’ I agreed while noting notes in my scruffy but almost angst free notebook. ‘It’s a perfect pasta for a beginner.’

Serve by eye not rule.

Cavatelli con cavolfiore e olive  Cavatelli pasta with cauliflower and olives

Enough for 4

  • 400 g farina di garno duro (semola)
  • 1 medium egg
  • a pinch of salt
  • filtered water – enough
  • 1 medium-sized cauliflower
  • Extra virgin olive oil – plenty
  • 2 cloves garlic, peeled and gently squashed with the back of a knife
  • a handful of coarsely chopped black olives
  • salt – enough
  • black pepper – enough

Pour the flour into a mound on the work surface and scoop a deep hollow in the center. Sprinkle over a pinch of salt. Break  the egg into the hollow and then using your fingers beak the yolk and start working the egg into the flour. Now add a little water and continue working the liquid into the dough. Keep adding water until you have a smoothly integrated mixture.

Knead the dough, pushing it forward with the heel of your palm. Fold the dough in half, give it a half turn and press it hard against the heel of your palm again. Knead for a full eight minutes by which time the dough should be smooth and soft as putty.

Divide the dough into quarters. Roll, mould and pat one-quarter into a circle about 5 ml thick. Cut the square into strips about 3 cm wide. Cut the strip into match sticks about 3 mm wide. The end epic of the circle which are too small can be set aside and worked back into the rest of the dough.

Work on  a well floored board. Position your well-floured index, middle and ring finger against the far edge of the dough matchstick and then roll/flick your fingers towards you so he dough curls onto a long arc with three in-dents. Move the cavatelli curl onto a tray or sheet dusted with semolina flour.

Break the cauliflower into large florets. Bring a large pan of well salted water to a fast boil and the cook the florets for about 1o minutes or until they are soft and very tender.

Use a slotted spoon to lift the cauliflower out of the pan and into a colander to drain. In a saute pan warm the oil and then gently fry the garlic until it is golden and fragrant. Do not let it burn. Remove the garlic and then add the cauliflower and olives. Stir well so both are coated with oil and gently mash the cauliflower with the back of the wooden spoon until you have a soft, creamy mixture. Add more oil if necessary. Turn of the heat

Cook the pasta in the cauliflower water until al dente which will only take a few minutes. Drain the pasta – reserving some cooking water – and add it to the pan. Stir. Add a little cooking water to loosen and emulsify the dish if necessary. Serve immediately.
